Zachary Greatting, Owner AND Sommelier

Zachary Greatting started Brix Catering & Events in 2012 as a passion project, to bring food and wine pairing to people’s homes.  After completing culinary school at Kendall College, and the Wine Intensive at the Culinary Institute of America Greystone, Zachary worked as Assistant Sommelier at the two Michelin starred restaurant Ria.  It was during this time that the original idea for Brix came to fruition.  After Ria closed, Zach took a position in wine sales, which allowed him the time on nights and weekends to start catering.  One wine dinner led to another, and referrals grew the business from a hobby to the full service catering and events company that Brix is today.

Joe Gancarz, Executive Chef and Partner

Executive Chef Joe Gancarz began his culinary career out of necessity during college.  These humble beginnings in a series of fast casual restaurants were just the start of an already impressive career.  Joe left the traditional safe route and pursued culinary school at Chicago’s Kendall College.  The many accolades Joe received at school including deans list and being selected as teaching assistant, point to his never fail attitude that have carried him through his culinary career.  After school Joe worked in a series of Michelin starred restaurants including a position as Chef de Cuisine responsible for a large portion of the menu that earned the star as well as a 2015 Zagat 30 under 30 Best Young Innovative Chefs. Today Joe has taken the position of Executive Chef and partner at Brix, forming a new partnership with his friend from the first day of culinary school.  He is poised to bring the Michelin Star experience to the world of catering and eventually to a series of restaurant projects the new partnership will create.

Julia Greatting, Catering & Events Director

Julia knew from a very early age that she wanted to plan events.  From arranging flowers, to pulling all of the details together Julia has always excelled when it comes to the perfect party.  A degree in International Business led to her first job in political fundraising, specifically setting up events.  From there Julia moved to the corporate setting, spending several years with Marriott planning large scale corporate events in Chicago.  Julia was then offered a position running the catering division for Pastoral, all the while helping her now husband start Brix.  Julia is pleased to be on board full time making sure our events are not only executed perfectly, but also have a special touch that only a family business can bring.  

Ian Mccaffrey, Sous Chef

Ian started his culinary career very early in life, cooking in competitions throughout high school.  He always knew that this is what he wanted to do forever.  Ian attended Johnson and Wales in Charlotte, North Carolina and enjoyed his years in the south learning that style of cuisine.  For someone so young, Ian has a long resume doing everything from fast casual to fine dinning.  Ian came to Chicago for an opportunity to work with Joe executing fine dinning tasting menus at the Michelin Starred level.  We are so pleased Ian decided to follow Joe to Brix to be a part of this exciting venture allowing him the opportunity to change the catering and events scene in Chicago, while also learning how to start a small business.

Domaine is the perfect place to host your next event, with capacity for 50 seated guests or up to 100 for a cocktail style event.  The newly built space, located in Roscoe Village, was designed to offer the comforts of home without the hassle of preparing in advance or dealing with cleaning after.  Domaine is perfect for rehearsal dinners, corporate happy hours, your favorite sporting event, or any occasion you may not want to host at home.

Drop off/Corporate Catering

Brix is a catering specialist. Years in the restaurant industry allow us to bring the experience of a great Chicago restaurant to your boardroom. We're not your local restaurant trying to make our menu items work for catering. We are chefs trying to take the fresh delicious food that we put on our own dinning room tables and bring that to your office. Not only do we make it fresh and delicious but we have taken time to make sure our food travels to you safe and secure. We don't send you a delivery drive like the other Chicago caterers. We will send a chef who made your food, knows how to keep it safe and will be able to handle any questions you have upon their arrival.

Package includes 2 house wines and 3 domestic beers as well as bottled and sparkling Water.



Wicker Park

$20 per guest (4 hours)

Choice of 2 premium wines and 4 craft/imported beers from the Gold Coast Package, Bottled Water, Sparkling Water.


The Loop

$12 per guest (2 hours)

Perfect for our friends in the corporate world.  Package includes 2 house wines and 2 domestic beers from our as well as bottled and sparkling water.

Lincoln Park

$25 per guest (4 hours)

Choice of 2 premium wines and 2 domestic and 2 craft or imported beers. Package includes Vodka, Gin, Whiskey, and Rum.  Standard mixers include Coke, Diet Coke, Sprite, tonic, soda water, lemons, limes, and olives.


Gold Coast

$35 per guest (4 hours)

Choice of 4 premium wines and 2 domestic and 2 craft or imported beers. Package includes Vodka, Gin, Whiskey, Rum, Tequila, and Scotch.  Standard mixers include Coke, Diet Coke, Sprite, tonic, soda water, lemons, limes, and olives.


Metric Coffee

$5 per guest

Enjoy our local roasting partner Metric Coffee Co.  offering hand selected coffee beans from around the world roasted right here in Chicago.  Package includes regular, decaf, sugar, Splenda, creamer, and cups with lids. Add tea service for an additional $2 per guest including 4 assorted teas and hot water.  Interested in a 32oz growler of metric cold brew add it to your package for $15 each (we have it on tap to keep the kitchen moving fast!)



Consumption Bar 

We are now happy to offer the option to run the bar at your event by consumption.  This option will work for those who might be considering purchasing the alcohol at a liquor store and return what is not consumed after the event.  Brix is happy to take care of this for you, and charge you after for items that have been open or consumed during your event.  Prices are listed on the wine, beer, and spirits list.

Bar packages include all liquor licensing fees and liability insurance, excluding mixers beverage packages.  Brix Catering & Events is not responsible for liquor liability if you choose to provide your own alcohol.  Bar packages do not include bartending services, taxes, or gratuity.  Bartenders and cocktail servers are available for $40 per hour with a four hour minimum.  An 18%  gratuity will be included on all beverage sales in addition to Chicago sales tax of 10.25%.
